Barbecuing the Perfect Medium Rare Steak
Brian Kennelly of Aubrey’s Meats guarantees that following this recipe’s 10 steps will always result in a perfectly barbecued steak.

  1. Turn both sides of BBQ to HIGH
     
  2. Close lid and heat a MINIMUM of 5 minutes
     
  3. Add spices to steaks (less is better)
     
  4. Open lid and scrape/brush of any residue (the heat will kill any harmful bacteria)
     
  5. Turn ONE side of BBQ to Medium or Medium Low
     
  6. Place steaks on HOT side for ONE minute
     
  7. Slide (do NOT flip) steaks to MEDIUM side
     
  8. Check and note time it takes until juices start to bubble up onto the steak’s surface
     
  9. FLIP steaks back onto HOT side for ONE minute
     
  10. Slide (do NOT flip) steaks to cool side for ONE HALF the time of the first visit

Remove and enjoy a perfect Medium Rare Steak

Note: Adjust times to compensate for humidity, wind, temperature, and your BBQ’s unique characteristics.

Note: BBQ Sauces should only be used in smaller quantities and applied only in the last minute or two, as the sugar in them burns too easily.
