Prosciutto Melon Salad
Fresh pieces of cantaloupe melon wrapped with thinly sliced
Prosciutto. Served with mixed greens, grape tomatoes, sliced
radishes, cucumber and tossed with our house made balsamic
vinaigrette
What you will need:
- 1/4 canteloupe
- 3 slices of Prosciutto
- Mixed greens
- Grape tomatoes
- Sliced radish
- Cucumber
- Balsamic vinaigrette
You can either buy balsamic vinaigrette or make your own.
Basically you combine 1 part balsamic vinegar and two parts
olive oil with a teaspoon of Dijon mustard and your favorite
herbs to taste.
Preparation:
- Cut melon into 3 equal parts and remove rind
- Wrap prosciutto around each melon slice
- Mix greens and other veggies in a large bowl
- Toss with balsamic vinaigrette
- On a large plate place salad in the middle and surround
with prosciutto wrapped melon.
- Salt and pepper to taste
This salad pairs very well with a light white wine such
as a pinot grigio.
