Sharing the ByWord - October 1st

Announcements:

Recognizing the legacy of oppression and systemic racism that has targeted Canada's Indigenous Peoples, Marchés d'Ottawa Markets strives to help remove barriers that prevent Indigenous people from participating in Ottawa's Public Markets Program and accessing clientele in Ottawa.

This goal is highlighted by the recognition that Ottawa exists on the unceded, unsurrendered Territory of the Anishinabe Algonquin Nation whose presence here reaches back to time immemorial.

In order to support/foster access and opportunity and amplify Indigenous voices, foodways and traditions, Marché d'Ottawa Markets will be offering free vending spaces to Indigenous producers beginning in the 2021-2022 market season.

If you or someone you know is an Indigenous maker, baker, artisan, or grower, forager, fisher, farmer, creator, we encourage you to apply and share the news so that together we can create a more diverse and representative market experience for everyone!

Community Spotlight:

As part of our Community Spotlight, we chatted with Chadwick Lewis, Farmer and Founder at Urban Fresh Produce.

Find him at the York Street Farmers' Market - Saturday mornings from 9am-5pm.

We asked Chadwick the following questions:

When did you start your operation?

I started my business in January 2021.

How did you learn? Who taught you?

I was a registered farmer in the Caribbean in St Lucia. When I came to Canada, I studied horticulture at Algonquin College and worked in a greenhouse in Quebec.

What did you produce first?
The first produce of the season was bell peppers, yellow zucchini, and eggplant, with potatoes, squash, kale, and cucumbers coming later in the season. I am very excited to grow more varieties of peppers next year, as well as more purple produce; purple potatoes, purple beans and purple peppers to name a few.

What's the one thing that's surprised you the most about your business?

The thing that surprised me the most about the business was all the different aspects that are involved. I love to be in the field, but I had to learn accounting, marketing, and reaching out to new clients in innovative ways.

What's been your proudest moment so far?

After the irrigation system that we had ordered was delayed, I had to spend countless hours watering the plants manually. I was so proud when I saw all my hard work pay off seeing the plants bearing fruits and growing healthy.

What advice would you give to someone starting out in your industry?

My best advice would be to start planning early. If you think you need to make a seed order in January, put in the order 1-2 months earlier to avoid delays. Anticipate delays and allow yourself enough time for marketing and reaching out to your customers so they know what you have to offer.

Ingredients:
1 5lb turkey, whole
2 large onions, chopped
1 head of garlic, minced
3 stalks celery, chopped
1/4 cup turkey fat (from turkey)
1/4 + 1/4 cup butter divided
1/2 cup flour
2 cups turkey broth (from turkey)
2 cups milk
½ tbsp ground rosemary
1 tbsp sage
1/2 tbsp thyme
Salt and pepper to taste
Bay leaves and peppercorns for stock
1/4 bunch parsley, chopped
5 cups of veggies (frozen peas and carrots or any combination of fresh cooked or steamed veggies like zucchini, green beans, corn etc.)
Your favourite pie pastry/crust recipe

Instructions:
On a cutting board, remove the breasts and legs of the turkey, saving the carcass for stock.

Rub 1/4 cup melted butter and rosemary, sage and thyme mixture onto turkey breasts and legs thoroughly.

Roast at 350 degrees for 45-60 mins (or until cooked through).

While the turkey is cooking, add the carcass to a pot with water, bay leaves, salt and peppercorns. Simmer on low for 4 hours.

Strain the broth and chop up turkey breasts and legs into cubes (removing bones). Strain drippings and separate the fat from the drippings. The fat will be used to make the gravy and the drippings will give added flavour to the broth.

In a large pot, add butter and turkey fat. Fry onions, then add celery and garlic and fry until translucent. Add flour and stir for an additional 3-5 minutes. Add stock, drippings and milk and bring mixture to a boil. Keep stirring the mixture until thickened.

Add veggies to the liquid mixture and chopped turkey.
Season with sage, thyme, salt and pepper and taste mixture to ensure adequate seasoning. Adjust to taste.
Add 2-3 cups of the mixture to your favourite pie crust, bake and enjoy!

There will be extra filling, which can be portioned and frozen for the next time you want to make a pie.
